Today I am preparing a fabulous feast for my wonderful family. Family dinners are still a big thing for us and we often spend over an hour each night talking and laughing about the days events. Tonight is a bit special, of course. I made up little goodies bags for everyone with chocolates and itune cards. Finished up some valentine themed napkins for the table and gave everyone one of my handmade Valentine's.
For Dinner, we are starting with chocolate dipped strawberries and a small salad. Followed by Angel Chicken and garlic herb bread. To finish off, I made a gluten free Key Lime Pie with fresh whipped cream. I can't wait...hope the kids aren't swamped with homework tonight.
Key Lime Pie
One package of gluten free ginger snaps(crushed), add 3tbl melted butter to make crust. (recipe called for graham cracker crust).
Add: Three egg yolks, one can of sweetened condensed milk, and 1/2 cup of Nellie and Joe's 100% key lime pie juice. Blend well, till smoothe. Pour into prepared crust. Bake for 15 minutes at 350. Let stand for 10 minutes, then refrigerate. Before serving, top with freshly whipped cream. Enjoy!!
This recipe looked so easy...and it was. It comes from the bottle of Nellie and Joe's Key Lime Juice( found it at the commissary in the specialty area). I just pulled it out of the oven and looks great. I'll let you know how it tastes.
